INGREDIENTS:
1 whole large avocado
1 clove garlic, peeled
1/2 tablespoon fresh lime or lemon juice
3 tablespoons olive oil or avocado oil
1/4 teaspoon kosher salt
1/4 teaspoon ground black pepper
Water

DIRECTIONS:
In a mini food processor add the peeled clove of garlic, avocado, lime or lemon juice, olive oil, salt and pepper
Start by smashing and peeling a clove of garlic. Drop it into a mini food processor.Throw in the avocado. Add a half tablespoon of lime juice. And a quarter teaspoon of both salt and pepper. Add in the olive oil.
Puree and scrape down the sides as you go. Add a little water at a time to thin it out to a desired consistency.
Keep in an airtight container for at least a week, but 3 to 4 days is best.

Process until smooth, stopping to scrape down the sides a few times. Thin the salad dressing out with a little bit of water (1/4 cup to 1/2 cup) until it reaches a desired consistency.
